Cascara is an infusion made from the dried skin of the coffee cherry &mdash so it comes from the coffee plant. While it's brewed like a herbal tea, it does still contain a small amount of caffeine. Grown without chemicals in the highlands of Junín and Cusco, Peru, at elevations between 1,350 and 1,700 metres above sea level. After harvesting, the pulp is separated from the coffee bean and slowly sun-dried over 15 to 18 days, giving it rich, fruity notes &mdash raisin, sugarcane, plum, dried apple, honey, and orange. Brewed, it produces a clean, fruit-forward cup ranging from light to deep wine in colour. A delicious find for anyone who loves all things that can be brewed!
