Here is a very different Si Ji Chun than what we normally know in its unroasted version offering a quite floral opulence. Although made from the same botanical variety (spring harvest, manual picking), this Oolong has undergone a roasting of about forty hours on longan wood charcoal (dragon's eye fruit tree). This results in dark rolled leaves with deep green reflections. When infused, they release a copper-colored and limpid liquor with aromas of fruit paste and caramel. On the palate, the sweet flavors carry complex flavors of candied flower, quince, apricot jam, brioche and butterscotch. An exclusive tea, available in very small quantities!
