Produced on the mountain peaks behind the Huiming temple, near Jingning (Zhejiang), this green tea is made from Bai Ye, the same tea crop from which the well-known Anji Bai Cha tea is made. This botanical variety bears beautiful buds&mdashlight green and almost pale lemon yellow in colour&mdashwith very distinctive flavours. Its aromas of pine nuts, edamame, buttered asparagus, lemons, melons and white flowers are accompanied by a refreshing hint of salt. The ample texture of this tea is soft and slightly sweet. A green tea full of finesse.
